My philosophy: As every experienced fisherman and angler will tell you, when it comes to catching fish, it generally boils down to two factors: 50% depend on the mood the fish is in, while the other 50% are pure luck. Perhaps we shouldn’t forget about the weather either, that’s another 50%! Given these math-defying odds, it is of little surprise that sometimes the tides do not provide exactly what one might fancy on that day; especially if there is no compromising on quality. And no, that’s not because I’m a lousy angler!
But fear not! Instead of being at the mercy of the sea’s capricious benevolence, we shall turn this natural uncertainty to our culinary advantage. Through my network of local fishmongers and fishermen (all of whom owe me favours), I’m going to explore and source the finest and freshest produce available for the day of your visit and recommend the best method of preparation. Imagine going to a tailor to get a sartorial piece made just for you, but instead, you have a Chef sourcing and creating a bespoke piscatorial menu. Now that I think of it, perhaps I should open an eatery on Saville Row...
